Experience Chocolate Truffle Bliss on National Chocolate Day

On National Chocolate Day indulge on these decadent coffee-infused truffles!

  • 7 oz. (200g) finely chopped dark chocolate
  • 1/3 cup (75ml) of coffee or espresso (adjust to your desired coffee strength, or you can use 1 tbsp or 2 tsp if using milk chocolate)
  • 1/2 tbsp butter, either Salted or Unsalted can be used. (optional)
  • 1/2 cup (125ml) unsweetened cocoa (used for coating the truffles).
        1. Place the finely chopped dark chocolate in a high-sided bowl.
        2. In a saucepan, heat the coffee over medium heat for 3 minutes (not simmering). Alternatively, you can microwave the coffee in a cup for 30 seconds.
        3. Pour the hot coffee over the chocolate in the bowl, and then blend the mixture either using a blender, or by stirring vigorously with a sturdy whisk. You need to achieve a smooth, consistent mixture.
        4. If desired, you can add the butter to the mixture and stir until the texture is exceedingly smooth. Ensure that all the chocolate lumps are completely melted.
        5. Allow the ganache to stand at room temperature for about two hours or until it has set and become firm.
        6. With a spoon, scrape across the surface of the ganache. Dust your hands with cocoa and quickly shape the mixture into 1-inch (2.5cm) balls using your fingertips.
        7. Roll these truffle balls in the cocoa until they are evenly coated.
        8. Place the coated truffles on a baking mat, waxed paper, or parchment paper to set for several hours
